    I was inspired to write this book because I believe there is a lack of basic nutrition knowledge and once we learn the basics we can make more empowered decisions about our foods and which ones will serve us. I wrote this book for anyone ready to take charge of their nutritional health and live their best life through foods. I have created several recipes that are vegan but easily interchangeable for meat lovers. A healthy relationship with food begins with knowledge. Eating Healthy 101 is an easy to understand breakdown of basic nutrition and how no part of your diet should involve restricting fats or carbs. Lists of healthy vegan options for protein, carbohydrates and fats. Each recipe has their macro-nutrient content listed. These simple yet wholesome recipes are for everyone. This book includes a list of the only kitchen equipment you'll ever need, pantry staples, lots of tips and a guide to determine one's own macro-nutrient needs depending on your health goals. I believe in grace and finding what works best for you. When I started my own health journey I had come from a very dark place in my life. It has taken many years to get to a place I love and find comfort in. Food shouldn't be stressful. I love to cook and experiment in the kitchen. Living in France, California and now Ohio, I've learned many cuisines. When I first started learning about the health benefits of foods, my passion for nutrition grew exponentially. I saw how it helped me heal and I wanted to help others find that too. I went back to school and graduated with a Bachelors degree in Nutrition Science. I am a stay-at-home mom to 3 plus one on the way, a fitness and nutrition coach, and a fiance to my loving partner Ken. I hope you enjoy my first book and would love to hear from you what you think.
